Getting Ready to Cook

 

After you’ve washed your hands, you can being prepping:

1. Open your MATTERbox and set out all contents.

2. Gather your shopping items.

3. Collect your cooking tools:

  • Can opener
  • Mixing bowl
  • Measuring cups
  • Large mixing spoon
  • 9”x13” baking dish
  • Oven mitts

4. Wash all fresh ingredients.

5. Open all cans, being careful with the lid.

6. Drain the chicken, bean, corn and diced tomatoes.

Recipe Directions

 

It’s important to read through all the directions before you begin. Step-by-step directions will follow.

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Spray the bottom and sides of a 9×13 baking dish with cooking spray and set aside.
  3. In a large bowl, combine drained cans of chicken breast, black beans, corn and diced tomatoes.
  4. Add can of chilies, 1 cup of shredded cheese, 1 packet of taco seasoning, and a dash of salt and pepper.  Stir to combine all ingredients.
  5. Lay 5 tortillas out on the counter.  Spoon 1/4 cup of mixture along the edge of one of the tortillas and roll up into tube. Repeat until mixture is gone. There may be some tortillas left over.
  6. Lay the tubes seam side down in the baking dish and bake for 15-20 minutes or until tortillas are crispy and golden brown.
  7. Using oven mitts, carefully remove from oven and enjoy!
